Summer is never complete without sitting down in the sunshine on a lazy afternoon with a tangy, refreshing mojito. This year as we sat down in the very late afternoon sun in Arrowtown we decided to treat ourselves and our family to a few mojitos. For me, mojitos are perfect for a hot summer afternoon as they are so refreshing that they help cool you down and let you sit in the sun and sunbathe for a bit longer.


For dinner the first night we made the mojitos we had barbecued shrimps doused in butter, garlic and parsley alongside olive bread and a fresh garden salad. The mojitos really complimented this dish. The mint of the mojitos paired well with the garden salad, and cut into the sweet buttery goodness of the shrimps. Alongside the salad the mojitos really made you feel as though you were eating a healthy meal even if you weren’t necessarily so. Don’t get me wrong there was a lot of nutritional value in this dinner, but also a bit of butter. I added a bit of parsley to the mojito that I had with dinner, and it really made the mojito fit in seamlessly with the shrimps. This is definitely a combination I will keep in mind for future summers.

This recipe is very easy to throw together and incorporates a lot of elements that can be used in a variety of other alcoholic drinks. Only a couple of them may need to be specially purchased to make these, while others commonly live in any bakers pantry. The recipe designed below is relaxed on quantities as I know you will want to have more than one. So instead of controlling how much of each ingredient to add, just stick to the conventional sizes of each ingredient. Buy a 1.5 litre bottle of soda water, buy a 750 ml bottle of lime cordial and snatch a good few sprigs of mint off your mint bush as you will use all of them up. Or enough of them to justify your spending. This will also mean you can cater to about 4 people, if you wish to cater to more, please adjust the quantities.



  • Soda water (1.5 litre bottle)
  • Lime cordial (750 ml bottle)
  • White rum (your choice to brand and size)
  • 3-4 sprigs of mint leaves
  • 2-4 limes
  • pinch of brown sugar (per glass)
  • Ice cubes (a couple of trays)


1  Fill each glass half to three quarters full with ice.

2  Add one shot per glass of white rum, and a half shot per glass of lime cordial.

3  Top up glass with soda water.

4  Slice limes lengthwise and pull off mint leaves then tap between your palm and two forefingers to activate mint (yes this is a technique that actually works).

5  Add pinch of brown sugar to each glass and stir until dissolved, this will also combine all other ingredients.

6  Serve and enjoy!
