Matt’s Paprika Wedges

Matt has cooked wedges this way many times and they are absolutely delicious so I thought that I would share the recipe with you. The paprika gives them a nice golden colour, and a nice spicey kick.


  • 5 medium white-washed potatoes, cut into wedges
  • 2-3 T paprika
  • 2 T olive oil
  • Salt and pepper to taste


1  Preheat oven to 180°C fan bake.

2  In a bowl, season the wedges with the paprika and salt and pepper then drizzle the oil over top of the wedges. Toss the wedges until they are all evenly coated with the spice paste.

3  Lie the wedges out on a baking tray, making sure they don’t overlap where possible.

4  Fan bake for 35-40 minutes, removing when they are cooked through, crisp and golden.

*As an option, leaving the wedges to sit in cold water for 30 minutes prior to seasoning can help remove starch and stop them going soggy.

*Perfect served with aioli, sour cream or mayonnaise.
